Whew, Monday! You are brutal. I’m happy to throw myself back into a steady routine after several weeks of traveling and being away from home on weekends. I had an incredible time in Orlando with some of my coworkers eating and drinking at the International Food and Wine Festival over the weekend. I’m so glad I went and had some quality time with strong, smart, ambitious women.

stripedAlthough I’m still trying to catch up on rest, I’m more ready than ever to get stuff done and hammer out some new projects and get some more things done around the house. I feel like after the first month or two of getting settled into our house I kind of stepped away from stressing about decorating and making all of the rooms look cohesive. Now I’m excited to get back into it and make our house extra cozy and festive for the holidays.

3. Choose a Delivery Address

xoby organicsFor my first box, I ordered some everyday pantry needs as well as some organic baking supplies that I can use over the holidays. I’m excited to start baking with coconut flour, pure cane sugar, organic chocolate, and other goodies. I also ordered some ingredients for making white chicken chili.

Ingredients:

  • 1 lb. Boneless, skinless chicken breasts or tenders
  • 2 tbsp. avocado oil
  • 1 can organic Cannellini beans
  • 1 can organic Garbanzo beans
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 medium jalapeno pepper, chopped
  • 1 large poblano pepper, chopped
  • 1 1/2 tbsp. ground cumin
  • 1 tsp. ancho chili powder
  • 1 32 oz. carton chicken bone broth
  • salt & pepper to taste
  • 1 bundle fresh cilantro

Directions:

In a large skillet, drizzle 1 tbsp. of avocado oil over medium-high heat and add chicken. Cook thoroughly. Remove chicken from skillet, cut into small pieces, and set aside.

In a large pot, add another 1 tbsp. drizzle of avocado oil and add diced onion, jalepeño, poblano, and minced garlic. Cook for about 5 minutes or until fragrant. Season the vegetables with cumin, chili powder, salt, and pepper. Stir in the bone broth and chicken. Add parsley to taste.

Drain and rinse the beans. Add to the pot and bring to a simmer for approximately 15 minutes.

Serve chili topped with fresh parsley and a dollop of sour cream.

It’s been a minute. My life has mainly consisted of working my butt off on product and course improvements at work and trying to not fall asleep at 5:30pm now that it gets dark super early. I also was in San Diego two weeks ago for a Book-Based Business Mastermind that I co-hosted with my Self-Publishing School coworkers, and that was awesome. Other than that, I’m just trying to stay on top of my day-to-day tasks. Does anyone else have a hard time adjusting to the lack of sunset in fall/winter? It’s always so challenging for me this time of year.

I’m back from sunny San Diego and ready to jump back into my normal daily routine! In this final edition of cousin style, I’m sharing the last set of photos from our photoshoot in Denver. Katelyn and I had both selected a few favorite pieces from Sparrow Boutique, so we found a few different ways to style some outfits for autumn. Last week was a total whirlwind. This fall transition has been quite an interesting one so far. After returning from Colorado, we spent only a couple days at home in Nashville before taking off to Michigan for a packed weekend of family events.
