Today’s recipe is for delicious and mouth-watering cinnamon applesauce banana muffins. Since I love anything and everything breakfast related, these are one of many favorite muffin recipes I have. I especially prefer them in mini muffin form (plus you get more of them that way).

Here’s what you need.

+ 3 bananas, mashed
+ ½ tsp. salt
+ ¾ sugar
+ 1 egg
+ ⅓ butter, melted
+ ⅓ C. applesauce
+ 1 tsp. cinnamon
+ 1½ C. all-purpose flour
+ 1 tsp. baking powder
+ 1 tsp. baking soda

1. Preheat oven to 350 degrees F. Coat muffin pans with non-stick spray if you don’t have liners. Sift together the flour, baking powder, baking soda, and salt; set aside.

2. Combine bananas, sugar, egg, applesauce, cinnamon and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Remove from tray once cooled.

Makes approximately 6 large muffins or 14-18 mini muffins.

As a work-from-home professional who spends a lot of time in my home office, it’s important to find ways to comfortably lounge and unwind when the workday is over. I can’t believe it’s August already. I feel like everyone around me is talking about summer coming to a close or back-to-school stuff. Daylight is fleeting and it’s hard to say goodbye. I usually feel extra nostalgic around this time of year and get caught somewhere between wanting autumn weather and holding on tightly to summer and not ready to say goodbye to the extended daylight. Being in Nashville, I still have a hard time with how early the sun sets. Even in the summer, the latest sunset we get is at 8pm. Where I’m from, Michigan sunsets are around 10pm and set right over Lake Michigan and it’s so beautiful. I wish we had a little bit more daylight here. I’m not ready to say goodbye to longer days.

I’m going to do what I can to enjoy all of August and September to the fullest. A trip to Rock Island, more ice cream dates, and maybe a camping weekend can be squeezed in there. It’ll also be nice to go on more bike rides around Shelby Park once it’s not 100 degrees and humid out.
